Thanks to these tin-plated copper molds, you can bake your own Cannelés Bordeaux at home and spoil yourself and your guests. But you only succeed with specially designed bakeware. Think twice about getting a set of three.

Here is the recipe for Original Cannelés Bordelais:

For 16 cannelés you need half a liter of milk, two eggs, three egg yolks, 25 g butter, 200 g sugar, 100 g wheat flour, half a vanilla pod, a pinch of salt and three to four tablespoons of rum. Bring milk and butter together with the Contents of the scraped vanilla pod for cooking. At the same time mix flour and sugar and add eggs, egg yolks and salt. Then add the boiled milk and mix all the ingredients into an elastic dough with a consistency similar to that of pancakes. Once the dough has cooled off slightly, add the rum. Important: Now the dough must rest in the fridge for 24 to 48 hours!

On the baking day, take the dough out of the fridge for one hour before baking. Fill the tinned copper molds only three-quarters with the dough so that the cannelés do not overcook. Then slide the molds on a tray into the middle rail of the 220 degrees preheated oven. Lower the baking temperature to 180 degrees after five minutes and give the pastry about 80 minutes to bake. Keep an eye on it: the dough must be dark brown - then the caramelized crust, the A & O of the Original Cannelés, is created.

What you should know: Cannelés Bordelais last a maximum of eight hours when fresh and should soon be consumed. You can also freeze them immediately after baking. Frozen cannelés are heated in the oven until they return to their typical crusty crust. Bon Appetit!
