Characteristic of the Bourgogne-Langres pocket knife is the straight blade, which ends in a pulled-down point. Eye-catching are the domed handles made from reconstituted ivory - this is ivory powder mixed with resin. The extraordinary material is smooth, has no structure and is silky smooth in the hand. Polished jaws mark the transition to the blade.
A special feature of this exquisite knife is the blade made of carbon steel. This consists almost exclusively of carbon and iron as it did before the development of stainless steel in the 20th century. Traditionally forged blades exceed all knives with stainless steel blade in terms of sharpness and edge retention, because they have, inter alia, a much finer structure and contain little carbon. After use, a cleaning with running water is announced. As a care product is recommended a good blade oil (food safe). Over time, the blade darkens and gets a noble patina.
