Fischer-Bargoin Zen kitchen knife - X62CrMn14 Premium steel with 61 HRC hardness for passionate chefs
The 14C28N steel used for this brilliant range of kitchen knives from the renowned blacksmith Fischer-Bargoin in Thiers / Auvergne is a new development of the world-famous Swedish steel producer Sandvik. It was created specifically for particularly rust-proof knife blades of selected high quality. Its outstanding advantage over other knife steels in this price segment is the improved edge retention and sharpness. Without changing the microstructure, it can be hardened up to 62 HRC and remains very easy to resharpen, without inclining to microchipping.
The outstanding Zen product line in pure design was named after the young star chef Cyrille Zen, who has tested the entire Zen range of Fischer-Bargoin. You can choose between eight models:
- Zen office knife 10 cm: small, practical knife for exact peeling, snipping and chopping
- Zen boning knife 15 cm: ideal for removing bones, boning poultry and carving them
- Zen Santoku 17 cm: Japanese-style hollow-edge knife, perfect for cutting and chopping vegetables, seafood and meat. Nothing sticks to the broad blade.
- Zen filleting knife 19 cm: Thanks to its flexible blade, it perfectly fills even small fish and cuts extra fine slices.
- Zen chef's knife 20 and 25 cm: two great chef's knives for discerning chefs. Cut and chop meat, vegetables, herbs and more reliably.
- Zen Sashimi 24 cm: typical Japanese knife (Yanagiba) in a narrow, asymmetrical shape. Cuts and fillets super precise raw fish (sashimi).
- Zen bread knife 30 cm: Thanks to the serrated blade, it is ideally suited for the clean slicing and cutting of loaves, cakes, pies and big roasts.
Only an excellently hardened steel gives knife blades the required strength and durability. The degree of hardness is given in HR (Hardness Rockwell). To determine the value, press a test specimen with precisely defined time and force into the material. Based on the depth of the impression can then calculate the hardness. For knife steel, the test specimen C, a rounded diamond cone, is used as the indenter. Therefore, it is common to specify the hardness of knife steel in HRC.
The blades of the Zen kitchen knives by Fischer-Bargoin are made of chrome-manganese steel X62CrMn14 with a hardness of 61 HRC. This makes them above average hard, particularly durable and much superior to many conventional kitchen and chef's knives.
The ends of the curved stainless steel handles give the Zen knives the perfect balance when slicing, filleting, peeling and chopping. The robust, deep blue handles made of micarta, a high quality composite, are heat resistant and waterproof. Function and design harmonize perfectly with the Zen knives from the traditional Fischer-Bargoin forge.
