Fischer-Bargoin filleting knife - with flexible, extra sharp blade

The straight and curved filleting knife from the traditional family-owned Fischer-Bargoin in Thiers / Auvergne score with their flexible blades made of 12V27 stainless steel, also known as Swedish steel. With these two knives, you can effortlessly fillet fish and meat. To expertly fillet a fish, you'll need a knife with an extra narrow blade and a sharp tip so you can make a smooth cut from head to tail under the skin.

From the material 12C27 steel of the Swedish manufacturer Sandvik pocket and hunting knives and kitchen knives of all kinds are made. Introduced in the 1960s and since then continuously improved material convinces today by a finer microstructure and a much higher degree of purity. For the blade geometry of first-class filleting knives, a hardness of 56-57 HRC, high edge retention and extreme sharpness and flexibility of the cutting edge made of corrosion-free steel prove to be decisive advantages.

The Ultra Comfort handle made of resistant polypropylene of the two high-quality filleting knives is over 80 percent covered with soft, non-slip elastomer and provides a reliable secure hold. The ergonomic shape was designed especially for professionals.
