Heat conduction works perfectly with the flat, thick-walled pan: it can withstand very high temperatures, which are ideal for searing. Copper is a soft material, and the addition of little fat results in a convincing non-stick effect.
Do not let your food cool in the pan after heating to avoid the formation of verdigris.
An excellent pan made of untinned copper deserves careful treatment and good care. Before first use, it should be covered with one to two millimeters of fat and heated. Within a few minutes the smoking point is reached (do not wait until black smoke rises!), then tip away the oil and wipe out the copper pan with kitchen paper. It is now ready for use and will only be cleaned with paper in the future. This will create a nice patina over time. If you wash the pan with dishwashing liquid, it will need an oil treatment afterwards. Never put your precious copper pan in the dishwasher, then you will have something from this high-quality product for a lifetime.
This pan is made entirely of copper and is not induction compatible. Only the copper pans in Baumalu's B'Chef series and De Buyer's Prima Matera series are suitable for induction stoves.
